Instructions
Step 1: Prepare the Oven
Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or baking dish with olive oil or nonstick cooking spray.
Step 2: Cook the Vegetables

Fold the cooked spinach mixture into the eggs. Add the cherry tomatoes and chopped sun-dried tomatoes. Stir gently to evenly distribute the ingredients.

Pour the mixture into the prepared baking dish. Sprinkle mozzarella cheese evenly over the top if using.
Step 6: Bake
Bake for 35–40 minutes, or until the center is fully set and the top is lightly golden brown. A knife inserted into the center should come out clean.

Allow the quiche to cool for 10 minutes before slicing. This helps the quiche firm up and makes serving easier.
