Instructions
Step 1: Wash the Lemons
Thoroughly wash the lemons under running water to remove dirt, wax, and residue. Pat them dry with a clean kitchen towel.
Step 2: Slice the Lemons
Using a sharp knife, cut the lemons into very thin slices, approximately ⅛ inch thick. Remove any visible seeds.
Step 3: Arrange for Drying
Place the lemon slices in a single layer on dehydrator trays or a baking sheet lined with parchment paper. Ensure the slices do not overlap.
Step 4: Dry the Lemons
Using a Food Dehydrator
- Temperature: 135°F (57°C)
- Time: 8–12 hours
Dry until the slices become completely brittle and snap easily.
Using an Oven
- Temperature: 170°F (75°C) or the lowest oven setting
- Time: 4–6 hours
Leave the oven door slightly open to allow moisture to escape. Turn the slices occasionally for even drying.
Step 5: Cool Completely
Allow the dried lemon slices to cool to room temperature before grinding. This prevents condensation from forming.
Step 6: Grind into Powder
Place the dried lemon slices into a spice grinder, blender, or food processor. Blend on high intensity for 1–2 minutes until a fine powder forms.
Step 7: Sift the Powder
Pass the powder through a fine mesh sieve. Re-grind any larger pieces and sift again until all the powder has a uniform texture.
Step 8: Store
Transfer the lemon powder to an airtight glass jar or sealed container. Store in a cool, dry place away from sunlight.
