Step 1: Sterilize Jars and Prepare Canner

Wash 7 quart-sized mason jars, new lids, and screw bands in warm, soapy water. Rinse thoroughly.

Place the jar rack in the bottom of your water bath canner, set the clean jars inside, and fill the canner halfway with water.

Turn the stove heat to Medium-High intensity to heat the jars and bring the water to a gentle simmer ($180^\circ\text{F}$ / $82^\circ\text{C}$). Keep jars hot until ready to fill to prevent thermal shock breakage.

Fill a separate large tea kettle or stockpot with fresh water and bring it to a rolling boil over High intensity.
Step 2: Wash, Sort, and Stem the Grapes

Inspect your grapes carefully. Remove any soft, bruised, green, or split fruit.

Rinse the grape clusters under cool running water to remove dust and orchard debris.

Pluck the individual grapes off their stems. Place the clean grapes into a large bowl.
Step 3: Pack the Jars

Using your jar lifter, carefully remove one hot quart jar from the canner and place it onto a clean kitchen towel on your counter.

Place a canning funnel into the mouth of the jar.

Add $2\text{ cups}$ of whole clean grapes into the hot jar.

Pour $1\text{ cup}$ of granulated sugar directly over the grapes in the jar.
Step 4: Add Boiling Water and Set Headspace

Step 6: Cool, Seal Check, and Steep

After 25 minutes, turn off the heat, remove the canner lid, and let the jars sit in the hot water for 5 minutes.

Lift the jars straight up out of the canner and place them on a towel-lined countertop, leaving $1\text{ inch}$ of space between jars.

Allow the jars to rest undisturbed for 12 to 24 hours. You will hear the satisfying ping sound as the lids seal.

After 24 hours, check for proper seals by pressing the center of each lid. If it clicks or flexes, the jar did not seal and must be refrigerated immediately.

Steeping Period: Store sealed jars in a cool, dark place for 4 to 6 weeks before drinking. During this time, the boiling water extracts the rich flavor, deep purple color, and natural juice out of the whole grapes.
How to Serve

Open a matured quart jar of grape juice.

Pour the liquid through a fine-mesh strainer or cheesecloth into a glass pitcher to catch the remaining grape skins and seeds.

Serve chilled over ice. If the juice concentrate is too rich or sweet, dilute it to taste with cold water, club soda, or sparkling mineral water ($1\text{ part}$ juice to $1\text{ part}$ sparkling water makes a delicious natural soda).

Unopened Shelf Life: Properly sealed jars stored in a cool, dark, dry environment (like a pantry) will keep for up to 12 to 18 months.
