Equipment Needed

  • Outdoor grill, indoor cast-iron grill pan, or air fryer

  • Wooden or metal skewers (if grilling outdoors)

  • Mixing bowls

  • Tongs

  • Chef’s knife and cutting board

Ingredients

For the Garlic-Herb Grilled Shrimp

  • 1.5 lbs (680g) raw large shrimp (16/20 or 21/25 count), peeled and deveined, tails removed

  • 2 tbsp olive oil (or avocado oil)

  • 3 cloves garlic, finely minced

  • 1 tbsp fresh lemon juice

  • 1 tsp Italian seasoning (or a mix of dried oregano, basil, and thyme)

  • 1/2 tsp smoked paprika

  • 1/2 tsp sea salt

  • 1/4 tsp freshly cracked black pepper

  • 1/4 tsp red pepper flakes (optional, for a subtle warmth)

For the Caesar Salad Filling

  • 1 large head Romaine lettuce (about 4–5 cups), washed, thoroughly dried, and chopped into bite-sized pieces

  • 1/2 cup aged Parmesan cheese, freshly shaved or shredded

  • 1 cup seasoned garlic croutons, crushed into small bite-sized pieces

  • 1/3 to 1/2 cup creamy Caesar dressing (store-bought or homemade)

  • 1 tbsp fresh lemon zest

  • 1 medium avocado, diced (optional, for extra creaminess)

For Assembly

  • 4 large wrap tortillas (10–12 inch size; spinach, flour, or whole wheat)

Step-by-Step Cooking Instructions

1.Marinate the Shrimp:15-20 min prep.

In a medium bowl, combine the olive oil, minced garlic, lemon juice, Italian seasoning, smoked paprika, salt, pepper, and red pepper flakes. Add the peeled, deveined shrimp and toss until evenly coated. Cover and let marinate in the refrigerator for 15 to 20 minutes.

> Tip: Avoid marinating shrimp in citrus juice for longer than 30 minutes, as the acid will prematurely “cook” the proteins and compromise the texture.

2.Preheat Cookware to High Heat:Medium-High Intensity (400°F).

Set up your preferred cooking surface to ensure a proper sear:

  • Outdoor Grill or Stove Griddle: Preheat to Medium-High Heat ($400^\circ\text{F}$ / $200^\circ\text{C}$). Lightly oil the grates.

  • Air Fryer Method: Preheat your air fryer basket to 400°F (200°C) for 3 minutes.

3.Cook the Shrimp:4-6 min total.

Cook the shrimp using your chosen technique until opaque and firm:

  • Grill/Stovetop: Thread shrimp onto skewers (if using an open grate) or lay them directly flat on a preheated cast-iron griddle. Grill over Medium-High intensity for 2 to 3 minutes per side until pink, opaque, and slightly charred at the edges.

  • Air Fryer: Spread shrimp in a single layer inside the basket. Cook at 400°F for 5 to 6 minutes, shaking the basket halfway through until cooked through.

Remove from heat immediately and allow them to rest for 2 minutes.

4.Toss the Caesar Salad:2 min prep.

In a large bowl, combine the chopped Romaine lettuce, crushed croutons, shaved Parmesan, lemon zest, and Caesar dressing. Toss until the lettuce leaves are lightly and evenly coated. Fold in the optional diced avocado if desired.

5.Warm the Tortillas:30 seconds, low heat.

Place each tortilla on a warm dry skillet or grill for 10 to 15 seconds per side over Low-Medium Heat. Warming the tortillas makes them pliable and prevents tearing during assembly.

6.Assemble and Wrap:3 min prep.

Lay a warmed tortilla flat on a clean surface. Place a generous mound of the tossed Caesar salad mixture horizontally across the lower third of the tortilla. Top with 5 to 6 grilled shrimp.

Fold the left and right sides of the tortilla inward over the filling, then roll tightly from the bottom up to enclose all ingredients into a snug wrap. Repeat for all 4 wraps.

7.Optional: Sear the Wrap Outer Shell:1-2 min, medium heat.

For a crispy exterior, place the assembled wraps seam-side down on a warm skillet or panini press over Medium Heat for 1 minute per side until golden brown and sealed.

Pro Tips for the Ultimate Wrap

  • Dry the Lettuce Completely: Moisture is the enemy of a crisp wrap. After washing your Romaine, use a salad spinner or dry thoroughly with paper towels so the dressing clings nicely without turning soggy.

  • Tame the Croutons: Whole croutons can poke holes through the tortilla during rolling. Lightly crushing them gives you that essential Caesar crunch without tearing the wrap.

  • Warm the Wraps: Cold tortillas are stiff and crack easily. A brief 10-second warm-up makes folding effortless.
