Step-by-Step Instructions
1. Prepare the Baking Sheet Line a standard 9×13-inch rimmed baking sheet with unbleached parchment paper, leaving a slight overhang on the edges to make removing the frozen bark effortless later.
2. Mix the Yogurt Base In a medium mixing bowl, whisk together the Greek yogurt, 2 tablespoons of maple syrup, vanilla extract, and a pinch of fine sea salt until smooth and glossy.
3. Spread the Base Pour the yogurt mixture onto the center of the lined baking sheet. Using an offset spatula, spread the mixture evenly into an approximate 8×11-inch rectangle, roughly 1/3-inch to 1/2-inch thick. Avoid spreading it too thin at the edges to prevent brittle borders.
4. Create the Peanut Butter Caramel In a small microwave-safe bowl, combine the runny peanut butter, 2 tablespoons of maple syrup, melted coconut oil, vanilla extract, and 1/4 teaspoon of flaky salt. Whisk until uniform and pourable. Warm in the microwave for 10–15 seconds if the mixture is too thick.
5. Swirl and Layer Drizzle the peanut butter caramel generously over the yogurt base. Use the tip of a butter knife or toothpick to gently swirl the peanut butter through the top layer of yogurt for an even flavor distribution.
6. Add Crunch Scatter the chopped roasted salted peanuts evenly across the entire surface, gently pressing them down with the back of a spoon so they adhere securely to the base.
7. Melt and Drizzle Chocolate Combine the dark chocolate chips and 1 teaspoon of coconut oil in a small microwave-safe bowl. Microwave in 20-second bursts, stirring between each, until completely melted and glossy. Drizzle the warm chocolate over the peanut layer in a tight zig-zag pattern.
8. Finish and Freeze Sprinkle a pinch of flaky sea salt over the chocolate drizzle. Transfer the baking sheet horizontally to the freezer. Freeze uncovered for at least 3 to 4 hours, or until completely firm throughout.
Cutting, Serving & Storage
How to Slice
-
Remove the baking sheet from the freezer and let it sit at room temperature for 2 to 3 minutes to soften slightly (this prevents the chocolate layer from splintering).
-
Lift the parchment paper by the edges to transfer the frozen slab to a clean cutting board.
-
Use a large chef’s knife to slice into 12 even shards or rectangles, or simply snap into rustic pieces by hand.
Storage
-
Store the sliced bark immediately in an airtight container or freezer-safe silicone bag.
-
Layer pieces between parchment paper to prevent sticking.
-
Keep stored in the freezer for up to 3 months.
-
Enjoy straight from the freezer; the bark will soften quickly if left at room temperature for more than 10 minutes.
Expert Tips for Success
-
Yogurt Selection: Use thick, strained Greek yogurt. Regular yogurt contains too much water and will freeze with an icy, crunchy texture rather than a creamy bite.
-
Peanut Butter Texture: Use natural, drippy peanut butter where the only ingredients are peanuts and salt. If using sweetened or stabilized peanut butter, omit the extra oil from the caramel layer.
-
Chocolate Setting: Adding a touch of coconut oil to the dark chocolate keeps it from freezing rock-hard, allowing you to bite through the bark smoothly without the chocolate shearing off.
