1.5 tbsp (22 ml) Aged balsamic vinegar glaze (thick balsamic reduction)
Step-by-Step Instructions
1. Equipment & Oven Setup
-
Position your oven rack in the upper-middle position.
-
Preheat the oven to 200°C (400°F) standard bake, or 180°C (350°F) convection.
-
Line a heavy-duty baking sheet with parchment paper or aluminum foil for easy cleanup.
2. Bread Preparation & Par-Baking
-
Arrange the four artisan sourdough slices in a single layer across the prepared baking sheet, leaving at least 2 cm of space between each slice.
-
Lightly brush the tops of the slices using 1 tablespoon of the extra virgin olive oil.
-
Place the baking sheet into the preheated oven for 4 to 5 minutes, just until the top edges start to turn pale golden and crisp, but not fully browned.
-
Remove the tray from the oven. Carefully take a halved clove of fresh garlic and rub the cut side vigorously across the hot, rough surface of each bread slice. The bread’s texture will act like a microplane, depositing fresh garlic oils without overwhelming the toast.
3. Layering the Ingredients
-
The Base Cheese Layer: Place 1 to 2 thick slices of fresh mozzarella directly onto the warm, garlic-rubbed toast. Covering the bread with the cheese first creates a moisture barrier that prevents the tomato juices from making the bread soggy.
-
The Tomato Layer: Lay a thick slice of tomato over the mozzarella on each piece of toast. If your tomato slices are exceptionally juicy, gently pat them with a clean paper towel before placing them down to remove excess surface water.
-
The Top Melt & Seasoning: Place a smaller, thin slice of mozzarella over the tomato slice to secure it. Lightly sprinkle the tops with the dried Italian herbs and freshly cracked black pepper.
4. The Bake & Broil Phase
-
Return the loaded baking sheet to the oven at 200°C (400°F).
-
Bake for 6 to 8 minutes, until the mozzarella has fully melted over the edges of the bread and the tomato slice is tender and hot.
-
Switch the oven setting to High Broil for the final 60 to 90 seconds. Watch the oven continuously: allow the cheese to bubble rapidly and develop deep, roasted golden-brown spots across the top.
-
Remove from the oven immediately once blistered to prevent burning.
5. The Chef’s Garnish
-
Let the toasts rest on the baking sheet for 2 minutes so the bubbling cheese sets slightly and does not run when served.
-
Drizzle the remaining 1 tablespoon of high-grade extra virgin olive oil across the hot tops.
-
Drizzle ribbons of thick aged balsamic glaze diagonally across each toast.
-
Scatter generous amounts of fresh sweet basil leaves over the melted cheese.
-
Finish with a light pinch of flaky sea salt directly onto the tomatoes and cheese. Serve immediately while warm and crisp.
Chef’s Keys to Perfection
-
Bread Selection: Avoid soft sandwich bread. Open-crumb, rustic crusty bread (like naturally leavened sourdough) holds structural integrity under hot, juicy toppings.
-
Moisture Management: Fresh mozzarella stored in brine contains significant water. Drain the cheese rounds on a double layer of paper towels for 10 minutes prior to baking to avoid pooling liquid.
-
Balsamic Timing: Always add the balsamic glaze and fresh basil after baking. High oven heat ruins the delicate floral aromatics of fresh basil and causes balsamic vinegar to turn bitter.
Variations & Customizations
-
Prosciutto Caprese: Layer a thin ribbon of prosciutto di Parma beneath the mozzarella before baking for a savory, cured-meat saltiness.
-
Pesto Swirl: Spread 1 teaspoon of classic basil pesto directly onto the garlic-rubbed bread before layering the cheese and tomatoes.
-
Avocado Addition: Add thin slices of fresh, ripe avocado right beside the fresh basil garnish after the toast comes out of the oven.
Storage & Reheating Instructions
-
Make-Ahead Tip: Slice the bread, tomatoes, and cheese up to 6 hours ahead of time and store them separately in the refrigerator.
-
Storing Leftovers: Store any uneaten toasts in an airtight glass container in the refrigerator for up to 2 days.
-
Reheating: Do not microwave, as the bread will turn rubbery. Reheat leftover toasts on a wire rack placed over a baking sheet in an oven or toaster oven at 190°C (375°F) for 6 to 8 minutes until the crust crisps and the cheese re-melts.
