Step-by-Step Instructions

1. Jar Preparation & Sterilization

  • Inspect your glass jars carefully for any cracks, chips, or rough edges.

  • Wash the jars, lids, and rings thoroughly in warm, soapy water and rinse well.

  • Place the clean jars onto the rack of your water bath canner, cover with water, and bring to a simmer (180°F / 82°C) for at least 10 minutes to keep them hot and sterile.

  • Keep the lids in a small bowl of warm (not boiling) water to soften the sealing compound.

2. Vegetable Prep & Salting

  • In a massive bowl, combine the chopped cabbage, carrots, bell peppers, tomatoes, corn, onions, garlic, and hot chilies.

  • Toss everything with hands or large wooden spoons to distribute the colors evenly throughout the mix.

  • Optional Crisping Step: If you prefer ultra-crisp vegetables, toss the raw mix with 2 tablespoons of coarse salt and let it sit for 1 hour in a colander to drain excess moisture. Rinse briefly with cold water and pat dry before jarring.

3. Simmer the Spiced Brine

  • In a large stainless steel or enamel-coated pot, combine the vinegar, water, pickling salt, sugar, mustard seeds, coriander seeds, black peppercorns, celery seeds, red pepper flakes, and bay leaves.

  • Heat the mixture over medium-high heat, stirring until the salt and sugar completely dissolve.

  • Bring the brine to a rolling boil, then reduce heat to low and let it simmer for 5–7 minutes to infuse the whole spices into the liquid.

4. Packing the Jars

  • Using a jar lifter, carefully remove one hot jar at a time from the canner, emptying any water back into the pot. Place the jar on a clean towel-lined counter.

  • Set a canning funnel on the jar mouth. Pack the mixed vegetable medley firmly into the jar, pressing down gently with your fingers or a clean spoon to ensure a tight, even pack without crushing the vegetables.

  • Fill each jar, leaving roughly 1/2 inch (1.25 cm) of headspace at the top.

5. Adding the Hot Brine

  • Ladle the boiling spiced brine directly over the packed vegetables through the funnel, distributing the whole spices evenly among all jars.

  • Ensure all vegetables are completely submerged in the liquid while maintaining 1/2 inch of headspace from the rim.

  • Slide a bubble popper or a clean wooden chopstick down the inside walls of each jar to release trapped air bubbles. Top off with extra hot brine if the level drops.

6. Sealing & Processing

  • Wipe the rims of the jars with a clean, damp paper towel to remove any stray oil, brine, or food particles that might compromise the seal.

  • Center a warm lid on each jar, apply the metal screw band, and turn it fingertip-tight (do not over-tighten).

  • Lower the filled jars back into the water bath canner. Ensure the water covers the jar tops by at least 1 to 2 inches.

  • Cover the canner, bring the water to a full rolling boil, and process:

    • 0–1,000 feet elevation: Process for 15 minutes.

    • 1,001–3,000 feet: Process for 20 minutes.

    • Above 3,000 feet: Process for 25 minutes.

7. Cooling & Checking Seals

  • Turn off the heat, remove the canner lid, and let the jars sit in the hot water for 5 minutes.

  • Use the jar lifter to remove the jars vertically (do not tilt) and set them onto a towel-lined surface spaced 1 inch apart.

  • Let the jars cool undisturbed at room temperature for 12 to 24 hours. You should hear the satisfying pop of the lids sealing.

  • Check the seals: Press the center of each lid. If the lid is concave and does not flex or click, the jar is properly vacuum-sealed. Refrigerate any unsealed jars immediately and consume within 3 weeks.

Flavor Development & Storage

  • Initial Curing: While delicious immediately after cooling, allow the sealed jars to rest in a cool, dark pantry for at least 3 to 7 days before opening to let the flavors meld.

  • Shelf Life: Sealed jars remain fresh in a cool, dark place for up to 12 to 18 months.
