Instructions

Step 1: Prepare the Lemons

Step 2: Infuse the Alcohol

Place all of the lemon zest into a large sterilized glass jar. Pour the vodka over the zest, ensuring every piece is fully submerged. Seal the jar tightly and store it in a cool, dark place for 14 days. Shake the jar gently every two to three days to help the flavors develop.

Step 3: Make the Simple Syrup

After the infusion period, combine the sugar and water in a saucepan over medium heat. Stir continuously until the sugar completely dissolves. Do not boil vigorously. Remove from the heat and allow the syrup to cool completely.

Step 4: Strain the Infusion

Pour the lemon-infused alcohol through a fine-mesh strainer or cheesecloth into a clean bowl or pitcher. Discard the lemon zest once all the liquid has been strained.
