Ingredients

  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar

For the Lemon Cream Layer

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping

For the Blueberry Layer

  • 3 cups fresh blueberries
  • ⅓ cup granulated sugar
  • 2 tablespoons cornstarch
  • ¼ cup water
  • 1 tablespoon lemon juice

For the Topping

  • 2 cups whipped topping
  • Fresh blueberries
  • Lemon slices
  • Lemon zest for garnish
  • Fresh mint leaves (optional)

Instructions

Step 1: Prepare the Crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.

Press the mixture evenly into the bottom of a 9×13-inch baking dish. Bake for 10–12 minutes until lightly golden. Remove from the oven and allow the crust to cool completely.

Step 2: Make the Blueberry Filling

Place the blueberries, sugar, cornstarch, water, and lemon juice into a medium saucepan.

Cook over medium heat while stirring frequently. As the berries soften, they will begin releasing their juices. Continue cooking for about 6–8 minutes until the mixture thickens into a glossy blueberry sauce.

Remove from heat and allow it to cool completely.

Step 3: Prepare the Lemon Layer

In a large mixing bowl, beat the softened cream cheese until smooth and creamy.

Add the powdered sugar and continue mixing until fully combined.

Mix in the lemon juice, lemon zest, and vanilla extract.

Finally, gently fold in the whipped topping until the mixture becomes light, fluffy, and smooth.

Step 4: Assemble the Dessert

Spread the lemon cream mixture evenly over the cooled crust using an offset spatula.

Carefully spoon the cooled blueberry mixture over the lemon layer and spread evenly.

Top everything with the remaining whipped topping, creating a smooth finish.

Decorate with fresh blueberries, lemon slices, lemon zest, and fresh mint if desired.

Step 5: Chill

Cover the dessert and refrigerate for at least 4 hours. For the best texture and flavor, chill overnight.

Slice into squares and serve cold.

Tips for Success

  • Always allow the crust to cool completely before adding the filling.
  • Use fresh lemon juice for the brightest flavor.
  • Chill the blueberry layer before assembling to keep the cream layer firm.
  • For cleaner slices, chill overnight and wipe the knife clean between cuts.
  • Fresh blueberries provide the best texture, but frozen blueberries can also be used. Simply thaw and drain them first.
  • Garnish just before serving to keep the fruit looking fresh.

Variations

  • Add raspberries or blackberries for a mixed berry version.
  • Substitute vanilla cookies for the graham crackers.
  • Add shredded coconut between the layers for extra texture.
  • Sprinkle chopped toasted almonds or pecans on top.
  • Make individual dessert cups for parties and special occasions.

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days.

This dessert is best served chilled.

You may freeze individual portions for up to one month. Thaw overnight in the refrigerator before serving.
