Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • ½ cup crumbled feta cheese
  • 2 cups fresh spinach, chopped
  • ½ cup cherry tomatoes, halved
  • ¼ cup sun-dried tomatoes, chopped
  • ¼ cup red onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon black pepper
  • ½ teaspoon sea salt
  • ¼ teaspoon paprika
  • ¼ cup shredded mozzarella cheese (optional)
  • Fresh parsley for garnish

Instructions

Step 1: Prepare the Oven

Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or baking dish with olive oil or nonstick cooking spray.

Step 2: Cook the Vegetables

Heat olive oil in a skillet over medium heat. Add the onion and cook for about 3 minutes until softened. Stir in the garlic and cook for another minute. Add the spinach and sauté until wilted, approximately 2 minutes. Remove from the heat and allow the mixture to cool slightly.

Step 3: Prepare the Egg Mixture

In a large mixing bowl, whisk together the eggs until smooth. Add the cottage cheese, feta cheese, oregano, basil, paprika, salt, and black pepper. Stir until well combined.

Step 4: Add the Fillings

Fold the cooked spinach mixture into the eggs. Add the cherry tomatoes and chopped sun-dried tomatoes. Stir gently to evenly distribute the ingredients.

Step 5: Assemble

Pour the mixture into the prepared baking dish. Sprinkle mozzarella cheese evenly over the top if using.

Step 6: Bake

Bake for 35–40 minutes, or until the center is fully set and the top is lightly golden brown. A knife inserted into the center should come out clean.

Step 7: Rest

Allow the quiche to cool for 10 minutes before slicing. This helps the quiche firm up and makes serving easier.

Step 8: Serve

Garnish with freshly chopped parsley and serve warm with a fresh green salad, roasted vegetables, or whole-grain toast.

Recipe Tips

  • Squeeze excess moisture from the spinach to prevent a watery quiche.
  • Use full-fat cottage cheese for the creamiest texture.
  • Add chopped olives or roasted red peppers for extra Mediterranean flavor.
  • Make it spicy with a pinch of crushed red pepper flakes.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.

Variations

  • Add cooked mushrooms for an earthy flavor.
  • Include diced grilled chicken for extra protein.
  • Replace feta with goat cheese for a tangy twist.
  • Add fresh dill or basil for brighter herb flavor.

Storage

Refrigerate leftovers in an airtight container for up to 4 days. Freeze individual slices for up to 2 months. Thaw overnight in the refrigerator and reheat in the microwave or oven until warmed through.
