  • 2 lbs (900g) Fresh Lychees (yields roughly 1.1 lbs / 500g after peeling and pitting; canned lychees in light syrup can be substituted—drain thoroughly).

  • 1.25 cups (250g) Fine Granulated Sugar (adjust slightly based on sweetness preference).

  • 2.5 tbsp Freshly Squeezed Lemon Juice (provides critical acid for pectin setting and balances sweetness).

  • 1 tbsp Powdered Fruit Pectin (regular fruit pectin).

  • 1 tsp Lemon Zest (finely grated, optional for extra citrus aroma).

  • 1 Pinch of Fine Sea Salt (heightens flavor).

Step-by-Step Instructions

1.Prep the Lychees:20 min | Prep phase.

Peel the bumpy pink husk from each lychee. Squeeze out and discard the inner hard seed. Collect all juice that escapes during peeling into a bowl. Coarsely chop the lychee flesh into bite-sized bits. For a smoother texture, pulse half the chopped fruit in a food processor 2–3 times.

Remove from heat. Perform the wrinkle test: spoon a small blob onto a plate chilled in the freezer for 2 minutes. Push it with your finger—if it wrinkles, it’s done. Skim any foam off the surface, pour hot jam into sterilized glass jars leaving 1/4-inch headspace, seal with lids, and allow to cool completely at room temperature.
