  • Easy Peel Method: Boiling beets whole with their skin and stems attached allows the skins to slip off effortlessly without mess or losing vibrant color.

  • Long Shelf Life: Properly processed in a water bath canned setup, these jars stay shelf-stable for up to 12 to 18 months in a cool, dark place.

  • Versatile Side Dish: Perfect on garden salads, grain bowls, charcuterie boards, or straight out of the jar.

Essential Canning Equipment

Having the right tools ready on your counter before you start heating the stove ensures a smooth, stress-free canning process:

Equipment Function
Water Bath Canner or Large Pot Must be deep enough to cover jars by 1–2 inches of boiling water, fitted with a bottom rack.
6 Pint Mason Jars Inspected for cracks or chips, washed in hot soapy water.
Canning Lids & Bands New two-piece flat lids and screw bands.
Jar Lifter Essential for safely inserting and extracting hot jars from boiling water.
Canning Funnel & Bubble Remover Ensures clean jar rims and removes trapped air pockets before sealing.

Ingredients

Primary Produce:

  • 3 lbs fresh beets (medium, uniform-sized red beets work best; leave 1 inch of stem and root attached to prevent bleeding)

Pickling Brine:

  • 2 cups white distilled vinegar (5% acidity — do not lower the acid ratio)

  • 2 cups granulated sugar (or 1 ½ cups for a tarter pickle)

  • 2 cups water

  • 1 tbsp pickling salt or coarse sea salt (non-iodized)

Spice Bag (Optional but Recommended):

  • 1 stick cinnamon, broken into pieces

  • 1 tsp whole cloves

  • 1 tsp whole allspice berries

Step-by-Step Canning Instructions

Safety Note: Always maintain a minimum vinegar acidity of 5%. Vinegar provides the safety barrier necessary to safely process beets in a water bath canner without risk of spoilage.

1.Prepare the Beets:45 min • Boiling.

Wash beets thoroughly under cool water to remove soil, leaving 1 inch of taproot and stem intact. Place whole beets in a large pot, cover with water, bring to a boil, and simmer until tender when pierced with a fork (30–45 minutes depending on size). Drain and immediately submerge in an ice bath. Once cool enough to handle, slip off the skins using your fingers or a paper towel. Trim off stems and roots, then slice or dice beets into ½-inch rounds or bite-sized wedges.

2.Sterilize Jars & Heat Canner:15 min • Setup.

Fill your water bath canner half-full with water and heat to a simmer (180°F). Wash 6 pint mason jars and new lids in warm, soapy water. Place empty jars inside the canner to keep them hot until ready to fill. Keep lids clean and ready nearby.

3.Prepare the Spice Brine:10 min • Medium Heat.

Tie cinnamon, whole cloves, and allspice in a piece of cheesecloth (or spice bag). In a saucepan, combine white vinegar, sugar, water, pickling salt, and the spice bag. Bring brine to a rolling boil over medium-high heat, stirring until sugar dissolves. Reduce heat to medium-low, cover, and let simmer for 10 minutes to infuse spices. Remove spice bag before packing jars.

4.Pack the Jars:10 min • Prep Zone.

Carefully pull one hot jar at a time from the canner using a jar lifter. Pack sliced beets snugly into the hot jar, leaving ½-inch headspace at the top. Ladle hot vinegar brine over the beets, maintaining the ½-inch headspace. Run a plastic bubble remover or utensil around the inside edge to release trapped air bubbles. Adjust liquid level if necessary.

5.Seal and Process:30 min • High Heat Boiling.

Wipe jar rims with a clean, damp paper towel to remove residue. Center a lid on each jar and screw the band down until fingertip tight. Use jar lifter to lower filled jars into the boiling water bath canner. Ensure water level is at least 1–2 inches above jar tops. Cover with lid, bring to a full rolling boil, and process for 30 minutes (adjust time for altitude if necessary).

6.Cool and Check Seals:12–24 Hours • Rest Period.

Turn off heat, remove canner lid, and let jars sit in water for 5 minutes. Gently remove jars using jar lifter and place upright on a thick towel line counter in a draft-free spot. Do not tighten bands or press lids. Allow to cool completely for 12 to 24 hours. Check seals: center of lid should be flat and not spring back when pressed. Store sealed jars in a cool, dark cabinet.

Pro Tips for Perfect Pickled Beets

  • Wear Gloves: Beet juice stains skin and cutting boards rapidly! Wearing disposable food-prep gloves will keep your hands stain-free.

  • Uniform Slicing: Try to cut beet slices or cubes to equal size so they absorb the pickling brine evenly.

  • Altitude Adjustments: If you live above 1,000 feet elevation, extend your water bath processing time according to standard home preservation guidelines:

    • 1,001–3,000 ft: Add +5 minutes

    • 3,001–6,000 ft: Add +10 minutes

    • 6,001+ ft: Add +15 minutes

  • Maturation Period: While you can eat pickled beets right away once cooled, their flavor improves dramatically after resting in the jar for at least 3–4 days before opening.

Serving & Flavor Variations

  • Golden Beets: Substitute yellow or Chioggia (striped) beets for a colorful twist.

  • Spicy Crunch: Add ½ tsp crushed red pepper flakes or sliced jalapeno to each jar for a zesty kick.

  • Garlic & Herb: Add 1 peeled garlic clove and a sprig of fresh dill into each jar prior to pouring hot brine.
