Ingredients

Chocolate Base

  • 2 cups sugar-free dark chocolate chips (70%–90% cocoa)
  • 3 tablespoons coconut oil
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 pinch sea salt

Crunchy Filling

  • 1 cup roasted almonds, chopped
  • ½ cup unsweetened shredded coconut
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • 2 tablespoons chia seeds
  • 2 tablespoons flaxseeds

Optional Keto Sweetener

  • 2–3 tablespoons powdered erythritol or monk fruit sweetener (adjust according to taste)

Equipment Needed

  • Medium heatproof bowl
  • Saucepan
  • Silicone chocolate bar mold or lined baking tray
  • Spatula
  • Measuring cups and spoons
  • Refrigerator or freezer

Instructions

Step 1: Prepare the Crunch Mixture

Begin by preparing the crunchy ingredients. Chop the roasted almonds into small pieces, making sure they are not ground into powder. The pieces should provide a satisfying crunch in every bite.

Add the chopped almonds, shredded coconut, pumpkin seeds, sunflower seeds, chia seeds, and flaxseeds into a bowl. Mix everything together evenly and set aside.

This step requires very little effort and takes about 5 minutes.

Step 2: Melt the Chocolate Mixture

Place a saucepan over low heat. Add the sugar-free dark chocolate chips and coconut oil. Stir continuously until the chocolate melts into a smooth and glossy mixture.

Keep the heat low to prevent the chocolate from burning. Chocolate melts best slowly, and gentle heating helps maintain its rich flavor and smooth texture.

Once melted, remove the saucepan from heat. Add cocoa powder, vanilla extract, sea salt, and keto sweetener if desired. Stir until all ingredients are fully combined.

Cooking intensity for this step is low because the chocolate only needs gentle warming.

Step 3: Combine Chocolate and Crunch Ingredients

Slowly add the prepared nut and seed mixture into the melted chocolate. Stir well until every piece is coated with chocolate.

The combination of creamy chocolate and crunchy ingredients creates the signature texture of these keto bars.

Make sure the mixture is evenly distributed so every bar contains a balanced amount of nuts, seeds, and chocolate.

Step 4: Shape the Bars

Line a small baking tray with parchment paper or prepare a silicone chocolate bar mold.

Pour the chocolate mixture into the mold or tray. Use a spatula to spread the mixture evenly and smooth the surface.

For thicker bars, use a smaller container. For thinner snack-sized pieces, spread the mixture across a larger tray.

Step 5: Chill Until Firm

Place the tray in the refrigerator for at least 2 hours, or until the chocolate becomes completely firm.

For faster preparation, place the bars in the freezer for approximately 30–45 minutes.

Once hardened, remove the chocolate slab from the tray and cut it into individual bars.

Serving Suggestions

Serve Keto Chocolate Crunch Bars chilled for the best texture. They pair well with:

  • Unsweetened coffee
  • Herbal tea
  • Keto-friendly smoothies
  • Low-carb desserts

These bars are excellent as an afternoon snack, post-workout treat, or after-dinner dessert.

Storage Instructions

Store the bars in an airtight container in the refrigerator for up to 2 weeks.

For longer storage, freeze the bars for up to 3 months. Place parchment paper between layers to prevent sticking.

Allow frozen bars to sit at room temperature for a few minutes before eating for a softer texture.

Recipe Tips

  • Use high-quality dark chocolate for a deeper chocolate flavor.
  • Avoid adding regular sugar because it increases carbohydrates.
  • Toast the nuts and seeds before mixing for extra crunch and flavor.
  • Add a small amount of cinnamon or instant coffee powder for a unique flavor variation.
  • Keep the chocolate temperature low while melting to prevent separation.
