Cooking Process & Heat Intensities

Step 1: Prepare the Blueberry Compote

1.Combine base ingredients:Prep Time: 2 min | Heat Intensity: Medium.

In a medium saucepan, combine 2 cups of blueberries, 2 tablespoons of sugar, 1 tablespoon of lemon juice, 1/2 teaspoon of lemon zest, and 2 tablespoons of water. If using cornstarch for a thicker sauce, whisk the cornstarch into the cold water before adding it to the pan.

2.Simmer and thicken:Cook Time: 6-8 min | Heat Intensity: Low.

Set the saucepan over Medium heat until the liquid begins to bubble and the blueberries start to break open. Step 2: Prepare the Pancake Batter

  2. Whisk Wet Ingredients: In a separate bowl or liquid measuring cup, whisk together the buttermilk, room-temperature eggs, melted butter, and vanilla extract.

  3. Combine Wet and Dry: Pour the wet mixture into the dry mixture. Gently fold the batter together using a spatula just until combined.

Crucial Tip: Do not overmix! The batter should remain lumpy. Overmixing develops gluten, which results in chewy, dense pancakes rather than light and airy ones. Let the batter rest at room temperature for 10 minutes to allow the buttermilk acid to react with the leavening agents.

Step 3: Cook the Pancakes

Place a non-stick skillet or griddle over Medium heat. Preheating ensures an even surface temperature so the first batch cooks uniformly. Lightly brush the surface with melted butter or oil.

Reduce the heat intensity to Medium-Low. Pour 1/4 cup of batter per pancake onto the hot skillet, leaving at least 2 inches between each pancake. Cook for 2 to 3 minutes. Look for bubbles forming on the surface and popping, while the edges begin to look dry and set.

3.Flip and finish:Time: 1-2 min | Heat Intensity: Medium-Low.

Slide a flat spatula beneath the pancake and flip gently in one smooth motion. Cook the second side for another 1 to 2 minutes until golden brown and cooked through the center. Transfer cooked pancakes to a warm plate and repeat with the remaining batter.
