  • 1 sterilized glass jar (750 ml capacity)

Instructions

Step 1: Prepare the Ingredients

Wash the limes thoroughly and slice them into thin rounds. Peel the garlic cloves while leaving them whole. Rinse the mint leaves gently under cool water and pat them dry using a clean towel.


Step 2: Prepare the Brine

In a measuring cup, dissolve the sea salt completely into the filtered water. Stir until no salt crystals remain. If using honey, mix it into the brine until fully dissolved.


Step 3: Fill the Jar

Place the garlic cloves into the sterilized jar first. Add the sliced limes, followed by the fresh mint leaves.

Pour the prepared saltwater brine into the jar until all ingredients are completely submerged.

Leave approximately one inch of headspace at the top of the jar to allow gases produced during fermentation to expand safely.


Step 4: Keep Everything Submerged

Use a fermentation weight or another food-safe weight to keep all ingredients below the surface of the brine. Exposure to air may encourage unwanted mold growth.

Seal the jar loosely if using a standard lid, or use an airlock fermentation lid if available.


Step 5: Ferment

Store the jar at room temperature between 68°F and 75°F (20°C to 24°C).

Allow the mixture to ferment for 5 to 7 days.

During fermentation you may notice:

  • Slight cloudiness
  • A pleasantly sour aroma
  • Mild fizz when opening the jar

These are all normal signs of active fermentation.

If using a regular lid, open the jar briefly once each day to release excess gas before resealing.

For a deeper fermented taste, continue fermenting for an additional one to two days.


Step 7: Refrigerate

Once the desired flavor develops, transfer the jar to the refrigerator.

Cold storage slows fermentation and helps preserve the infusion for up to one month.
