Yield: 4 small dessert cups
Difficulty: Easy
Ingredients
- 2 cups full-fat cottage cheese
- ¼ cup unsweetened cocoa powder
- 3 tablespoons maple syrup or honey
- 2 tablespoons milk (dairy or plant-based)
- 1 teaspoon vanilla extract
- ¼ teaspoon fine sea salt
- 2 tablespoons dark chocolate chips (optional)
- Fresh berries, chocolate shavings, or chopped nuts for garnish
Instructions
Step 1
Add the cottage cheese, cocoa powder, maple syrup, milk, vanilla extract, and salt to a high-speed blender or food processor.
Step 2
Blend for 2–3 minutes until completely smooth and creamy. Stop once or twice to scrape down the sides of the blender.
Step 3
Taste the pudding and adjust the sweetness by adding more maple syrup if desired. Blend again for 15–20 seconds.
Step 4
If using chocolate chips, melt them in the microwave for about 20 seconds and blend them into the pudding for an even richer chocolate flavor.
Step 5
Transfer the pudding evenly into serving bowls or jars.
Step 6
Cover and refrigerate for at least 30 minutes. Chilling allows the pudding to thicken and develop a richer flavor.
Step 7
Before serving, garnish with fresh berries, chopped nuts, chocolate curls, cocoa powder, or whipped cream if desired.
Serve chilled and enjoy.
Recipe Tips
- Blend thoroughly for the smoothest texture.
- Use full-fat cottage cheese for a creamier pudding.
- Dutch-process cocoa creates a darker, richer chocolate flavor.
- Add one tablespoon of peanut butter for extra richness.
- A pinch of instant espresso powder enhances the chocolate taste.
- Refrigerating overnight improves both texture and flavor.
Storage
Store the pudding in an airtight container in the refrigerator for up to 4 days. Stir before serving if any separation occurs. This recipe is not recommended for freezing because the texture may become grainy after thawing.

- Peanut Butter Chocolate: Add 2 tablespoons creamy peanut butter.
