Step-by-Step Instructions

Step 1: Sanitation and Pre-Heating

  1. Thoroughly wash jars, bands, and lids in warm, soapy water and rinse clean.

  2. Keep jars warm in a pot of simmering water or inside your preheating pressure canner to prevent thermal shock when adding hot broth.

Step 2: Prepare the Meat and Aromatics

  1. Place a skillet over medium-high heat. Add the ground turkey, breaking it up with a spatula until fully cooked through and lightly browned (about 6–8 minutes).

  2. Drain any excess fat thoroughly to ensure proper preservation quality.

  3. Stir in the chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and black pepper, coating the meat evenly. Remove from heat.

Step 3: Layer the Jars

  1. Set the warm jars on a clean, towel-lined surface.

  2. Layer 1 (Base): Add 1/4 cup of rinsed dry pinto beans into the bottom of each jar.

  3. Layer 2: Add 1/4 cup of uncooked long-grain white rice on top of the beans.

  4. Layer 3: Divide the diced red bell peppers and yellow onions evenly among the jars.

  5. Layer 4: Spoon an equal portion of seasoned browned turkey over the vegetable layer.

  6. Layer 5: Top with a portion of the diced tomatoes.

Step 4: Fill with Liquid

  1. Carefully ladle the boiling broth into each jar using a canning funnel, leaving exactly 1 inch of headspace at the top.

  2. Insert a bubble popper or clean silicone utensil around the inner edge of each jar to release any trapped air pockets. Check and adjust headspace if necessary.

  3. Wipe the rim of each jar with a clean paper towel dampened with white vinegar to remove grease or residue.

  4. Center a flat lid on each jar and screw the band down until fingertip-tight.

Step 5: Pressure Canning Process

  1. Place the prepared jars into a pressure canner filled with 2 to 3 inches of simmering water.

  2. Secure the canner lid and bring the water to a boil over medium-high heat. Allow steam to vent freely from the vent pipe for a full 10 minutes.

  3. Place the weight or close the petcock. Bring the canner to the correct pressure:

    • Weighted Gauge: 10 lbs of pressure (0–1,000 ft altitude) or 15 lbs (above 1,000 ft).

    • Dial Gauge: 11 lbs of pressure (0–2,000 ft), adjusting up for higher elevations.

  4. Process quart jars continuously for 90 minutes, regulating heat to maintain consistent pressure.

  5. Turn off heat and allow the canner to depressurize naturally until the pressure gauge returns to zero. Wait an additional 5 minutes before carefully unlocking the lid.

  6. Use a jar lifter to remove jars upright onto a towel-lined counter. Allow to cool undisturbed for 12 to 24 hours. Check seals before labeling and storing.

Serving Instructions

  1. Stovetop Method: Open jar and empty contents into a medium saucepan. Heat over medium heat, stirring occasionally, for 8–10 minutes until bubbling and heated through to an internal temperature of 165°F (74°C).
