Ingredients

White Flesh Dragon Fruit (Pitaya): 4 large fruits (peeled and diced, speckled with natural seeds)

Filtered Water: 2 cups (500ml)

Granulated Sugar or Agave Nectar: 1 cup (200g)

Fresh Lime or Lemon Juice: 3 tbsp (adds acidity to balance natural sweetness and aid preservation)

Basil Seeds or Chia Seeds (Optional): 1 tbsp (soaked, for added texture)
Cooking & Preparation Process
Step 1: Prep the Dragon Fruit

Wash the dragon fruit skins thoroughly under cool running water.

Slice off both ends of each fruit, then cut a shallow slit down the length of the skin. Peel away the thick outer pink skin to reveal the white flesh studded with black seeds.

Dice the white flesh into small cubes.
Step 2: Extract & Puree

Transfer the diced white dragon fruit into a high-speed blender or food processor.

Pulse on Medium intensity for 15–20 seconds. You want to break down the fruit into a smooth liquid puree while keeping the small black seeds intact without pulverizing them completely.
Step 3: Cook the Concentrate

In a medium stainless steel saucepan, combine the dragon fruit puree, filtered water, granulated sugar, and fresh lime juice.

Place the saucepan over Medium heat and bring the mixture to a gentle, low boil, stirring continuously until the sugar completely dissolves (about 5 minutes).

Reduce heat to Low intensity and let it simmer for an additional 5 minutes to slightly thicken into a rich juice concentrate.

Remove from heat and allow the concentrate to cool to room temperature.
Step 4: Bottle & Chill

Stir in the optional soaked basil seeds if you prefer extra textural contrast.

Using a funnel, pour the white dragon fruit concentrate into clean glass bottles or sealable jars.

Seal tightly and refrigerate for at least 2 hours until fully chilled before serving.
