  • Silicone spatula

  • Measuring cups and spoons

Ingredients

For the Coconut Protein Base:

  • 1.5 cups (135g) Unsweetened shredded coconut (medium flake)

  • 1 cup (100g) Unflavored or vanilla whey isolate / plant-based protein powder

  • 1/2 cup (125g) Creamy almond butter (or macadamia nut butter)

  • 1/4 cup (60ml) Liquid monk fruit sweetener or sugar-free powdered erythritol

  • 1/2 tsp Pure vanilla extract

  • 1/4 tsp Fine sea salt

  • 2-3 tbsp Unsweetened almond milk (only if needed to bring dough together)

  • 1 tbsp Virgin coconut oil

  • 1 tbsp Unsweetened shredded coconut (for garnishing)

Intensity & Difficulty Breakdown

  • Physical Effort: Low — Simple measuring, stirring, and pressing into a pan. No heavy dough kneading required.

  • Timing Sensitivity: Medium — The base must chill before adding melted chocolate so the layers stay crisp and distinct.

  • Technique Precision: Medium — Melting low-carb chocolate requires gentle heat to prevent seizing or burning.

Step-by-Step Instructions

1.Prep the Pan & Dry Ingredients:3 minutes.

Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides to easily lift the bars out later. In a large mixing bowl, combine the unsweetened shredded coconut, protein powder, and sea salt. Stir well to eliminate any dry clumps.

2.Mix the Base Dough:5 minutes.

Pour the melted coconut oil, almond butter, liquid sweetener, and vanilla extract into the dry mixture. Stir with a firm silicone spatula until a thick, cohesive dough forms. If the dough feels too crumbly to hold its shape, add unsweetened almond milk 1 tablespoon at a time until it holds together when pressed.

3.Press into the Pan & First Chill:15 minutes (Chill).

Transfer the coconut dough into your prepared baking pan. Use the back of a measuring cup or spatula to press the mixture down tightly and evenly across the entire bottom. Pro-tip: The firmer you pack it, the cleaner your bars will cut. Place the pan in the freezer for 15 minutes to set.

4.Melt Chocolate & Layer:5 minutes.

While the base chills, prepare the topping. Combine the sugar-free chocolate chips and 1 tablespoon of coconut oil in a microwave-safe bowl. Heat in 20-second bursts, stirring between each burst, until completely melted and glossy. Remove the pan from the freezer, pour the melted chocolate over the set base, and smooth it with a spatula. Sprinkle 1 tablespoon of shredded coconut on top.

5.Final Set & Slice:30 minutes (Chill).

Return the pan to the refrigerator for 30 minutes (or freezer for 15 minutes) until the chocolate topping is firm. Lift the slab out using the parchment overhang. Place on a cutting board and slice into 10 equal bars using a sharp, warm knife.

Expert Storage Tips

  • Refrigerator: Store in an airtight container lined with parchment paper for up to 2 weeks.

  • Freezer: Wrap individual bars in foil or plastic wrap and store in a freezer bag for up to 3 months. Thaw for 5 minutes at room temperature before eating.

  • Room Temperature Warning: Because coconut oil melts at 76°F (24°C), these bars are best served chilled.
