Instructions
Step 1: Prepare the Lemons

Wash the lemons thoroughly under warm water and scrub away any residue. Dry completely using a clean towel. Using a vegetable peeler, carefully remove only the yellow zest, avoiding the bitter white pith.

Step 2: Infuse the Alcohol

Place all lemon peels into a large sterilized glass jar. Pour the vodka over the peels until completely covered. Seal tightly and store the jar in a cool, dark place for 14 days. Gently shake the jar every couple of days.

Step 3: Prepare the Sugar Syrup

After the infusion period, combine the sugar and water in a saucepan over medium heat. Stir continuously until the sugar dissolves completely. Do not boil vigorously. Remove from the heat and allow the syrup to cool completely.

Step 4: Strain the Lemon Infusion

Strain the infused vodka through a fine-mesh strainer or cheesecloth into a clean bowl. Discard the lemon peels.

Step 5: Mix the Liqueur

Slowly pour the cooled sugar syrup into the lemon-infused alcohol while stirring gently. Taste and adjust sweetness if desired by adding a little more syrup.

Step 6: Bottle the Limoncello

Pour the finished limoncello into sterilized glass bottles. Seal tightly and refrigerate or freeze for at least one week before serving to allow the flavors to fully develop.
