Ingredients
- 6 large eggs
- ¼ cup milk
- ½ cup shredded cheddar cheese
- ½ cup diced bell peppers
- ¼ cup chopped onion
- ½ cup baby spinach, chopped
- ¼ cup diced cooked mushrooms
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- Fresh parsley for garnish (optional)
Instructions
Step 1: Prepare the Vegetables
Wash and chop all vegetables into small, even pieces. Heat olive oil in a small skillet over medium heat and sauté the onion, mushrooms, and bell peppers for 3–4 minutes until slightly softened. Stir in the spinach and cook for another minute until wilted. Remove from heat and let cool slightly.
Step 2: Mix the Eggs
In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and Italian seasoning until smooth and fully combined. Fold in the shredded cheese and cooked vegetables.
Step 3: Prepare the Pan
Lightly grease a 7-inch round cake pan or any air fryer-safe baking dish with cooking spray or a little olive oil. Pour the egg mixture evenly into the prepared pan.
Step 4: Air Fry
Preheat the air fryer to 320°F (160°C) for 3 minutes.
Place the pan inside the air fryer basket and cook for 15 minutes. Check the center with a toothpick or knife. If it comes out clean, the frittata is done. If needed, cook for an additional 2–3 minutes.
Step 5: Cool and Serve
Allow the frittata to rest for 5 minutes before slicing. Garnish with fresh parsley if desired and serve warm.
Recipe Tips
- Use room-temperature eggs for a fluffier texture.
- Avoid overfilling the pan to ensure even cooking.
- Add cooked bacon, ham, turkey sausage, or chicken for extra protein.
- Swap cheddar for mozzarella, feta, Swiss, or Parmesan cheese.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Reheat slices in the air fryer for 2–3 minutes at 300°F (150°C).
