Instructions

Step 1: Prepare the Beef

Mix in 1½ cups of cheddar cheese and ½ cup mozzarella cheese. Stir until the cheese melts into a creamy filling.

Remove from heat and let the mixture cool slightly before assembling.


Step 4: Assemble the Rolls

Lay one tortilla on a clean work surface.

Spread about ½ to ⅔ cup of the beef mixture evenly across the tortilla, leaving a small border around the edges.

Sprinkle with a little fresh parsley.

Roll the tortilla tightly into a log.

Repeat with the remaining tortillas.


Step 5: Bake

Preheat the oven to 375°F (190°C).

Arrange the tortilla rolls seam-side down in a lightly greased baking dish.

Brush the tops with melted butter or lightly spray with cooking spray.

Sprinkle the remaining cheddar and mozzarella cheese over the rolls.

Bake for 20–25 minutes until the cheese is melted, bubbly, and lightly golden.


Step 6: Serve

Remove from the oven and allow the rolls to cool for 5 minutes.

Top with chopped parsley and serve with salsa, sour cream, or guacamole.
