  • Food-grade gloves (essential for handling spicy peppers safely)

Ingredients

Main Produce & Aromatics

  • 1.5 lbs (700g) Fresh Jalapeño Peppers – Firm, bright green, and free of soft spots. Slice into $1/4$-inch thick rounds.

  • 4 cloves Fresh Garlic – Peeled and lightly crushed (1 clove per jar).

  • 1 small Yellow or White Onion – Thinly sliced (optional, adds extra crunch and subtle sweetness).

The Pickling Brine

  • 3 cups Distilled White Vinegar (5% acidity) – Essential for maintaining safe pH levels for water-bath canning.

  • 3 cups Filtered Water

  • 2 tbsp Canning & Pickling Salt – Pure salt without additives like iodine or anti-caking agents, which can cloud the brine.

  • 2 tbsp Granulated White Sugar – Balances the sharp acid without making the peppers taste overly sweet.

  • 1 tbsp Whole Black Peppercorns

  • 1 tbsp Cumin Seeds or Coriander Seeds (Optional, for aromatic warm spice depth)

Step-by-Step Canning Process

1.Sterilize & Heat Jars:Prep Stage | Medium Heat.

Fill your water-bath canner with water and heat to a simmer over medium heat. Wash jars, lids, and rings in warm, soapy water. Place the jars upright into the simmering water bath to keep them hot until ready to pack. Keeping jars hot prevents thermal shock and cracking when hot brine is poured inside.

2.Prepare the Peppers:Prep Stage | Gloves Required.

Put on disposable gloves to protect your skin from capsaicin burns. Slice the fresh jalapeños into uniform $1/4$-inch rounds. Leave the seeds and inner membranes intact for full heat, or core a few peppers if you prefer a milder yield. Thinly slice the onion and lightly crush the garlic cloves.

3.Simmer the Pickling Brine:5 Minutes | High to Medium-High Heat.

In a stainless steel saucepan, combine the white vinegar, water, pickling salt, sugar, peppercorns, and optional cumin seeds. Set burner to high heat and bring to a rolling boil. Once boiling, reduce to medium-high heat and let it simmer for 3 minutes, stirring until the salt and sugar dissolve completely.

4.Pack the Jars:Assembly Stage | Off Heat.

Carefully remove hot jars from the water bath using jar lifters. Drop 1 crushed garlic clove and a handful of sliced onions into the bottom of each jar. Firmly pack sliced jalapeños into the jars, leaving 1/2 inch of space at the top (headspace).

5.Ladle Hot Brine & Remove Air Bubbles:Assembly Stage | Precise Headspace.

Pour the hot boiling brine over the packed peppers using a funnel, maintaining 1/2 inch headspace. Run a plastic knife or bubble-remover tool down the inside edges of the jar to release trapped air pockets. Adjust brine level if needed. Wipe jar rims with a clean, damp paper towel to ensure a solid seal. Place lids on top and screw bands on until fingertip-tight.

6.Process in Water Bath:10 Minutes | Rolling High Heat.

Lower the packed jars back into the water-bath canner using jar lifters. Ensure the water covers the jar tops by at least 1–2 inches. Cover with a lid and bring the canner to a full, rolling boil over high heat. Once boiling rapidly, start a timer for 10 minutes (add extra time for higher altitudes).

7.Cool & Check Seals:12-24 Hours | Ambient Temperature.

Turn off heat, remove the canner lid, and let jars sit in the water for 5 minutes. Carefully lift jars out straight up without tilting them and place on a clean towel on the counter. Let them cool undisturbed for 12 to 24 hours. You will hear a distinct “pop” sound as jars seal. Press the center of each lid—if it stays firm and doesn’t flex, the jar is properly sealed.

 

Heat & Altitude Adjustments

Altitude Notice: Water boils at lower temperatures at higher elevations. Adjust your water-bath processing timer accordingly:

  • 0 – 1,000 ft: 10 minutes

  • 1,001 – 3,000 ft: 15 minutes

  • 3,001 – 6,000 ft: 20 minutes

  • Above 6,000 ft: 25 minutes

Storage & Shelf Life

  • Unopened Jars: Store properly sealed jars in a cool, dark place like a pantry or cellar. They will remain shelf-stable for 12 to 18 months. For optimal crunch and flavor maturation, wait at least 3 to 5 days before opening your first jar.

  • Opened Jars: Store opened jars in the refrigerator. Use clean utensils to scoop out peppers; they will stay fresh and crisp in the fridge for up to 3 months.
