Ingredients:

1 pound potatoes, cut into 1-inch cubes

1/2 pound carrots, cut into 1-inch pieces

1/4 pound mushrooms, halved or quartered

1 red bell pepper, chopped

1/2 red onion, chopped

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/4 teaspoon black pepper
For the Garlic Butter:

4 tablespoons butter, melted

2 cloves garlic, minced
Instructions:

Preheat air fryer to 400°F (200°C).

In a large bowl, toss the potatoes, carrots, mushrooms, red bell pepper, and red onion with olive oil, thyme, rosemary, salt, and pepper.

Arrange the vegetables in a single layer in the air fryer basket. You may need to do this in batches depending on the size of your air fryer.

Air fry for 15 minutes, or until the vegetables are tender and crispy, shaking the basket halfway through.

While the vegetables are cooking, prepare the garlic butter. In a small bowl, whisk together the melted butter and minced garlic.

When the vegetables are finished cooking, remove them from the air fryer and drizzle with the garlic butter. Toss to coat evenly.
