Instructions
Step 1: Prep the Wings for Ultimate Crispiness
The secret to crispy baked wings is removing moisture.

Pat them Dry: Use paper towels to pat the chicken wings extremely dry. Don’t skip this; wet wings will steam, not crisp.

Coat: In a large bowl, combine the baking powder, kosher salt, black pepper, and garlic powder (if using). Add the dried wings to the bowl and toss them until every wing is evenly coated. It will look like a thin, powdery film.
Step 2: Bake to Perfection (Intensity: High Heat)
We will bake these wings on a wire rack set over a baking sheet to allow the fat to drip away and hot air to circulate.

Combine: In a small saucepan, combine the honey, minced garlic, soy sauce, water, rice vinegar, and Sriracha (if using).
