Step-by-Step Instructions
Step 1: Prep the Oven and Pan
Preheat your oven to 375°F (190°C) with the rack positioned in the center. If using a separate casserole dish instead of an oven-safe skillet, lightly coat a 9×13-inch baking dish with non-stick cooking spray and set aside.
Step 2: Sauté the Aromatics (Medium Intensity)
Place your large oven-safe skillet over Medium heat (around 325°F / 165°C). Melt the 4 tablespoons of butter. Once foaming, add the diced onion and sliced celery. Sauté for 4 to 5 minutes until the vegetables soften and the onions turn translucent. Add the minced garlic and cook for 45 to 60 seconds until fragrant, stirring constantly to prevent scorching.
Step 3: Create the Roux & Build the Gravy
Sprinkle the 1/3 cup of flour evenly over the sautéed vegetables. Stir continuously for 1 to 2 minutes over Medium heat to cook out the raw flour taste; the mixture will form a thick paste.
Slowly pour in the chicken broth in a steady stream while whisking vigorously to prevent lumps. Once smooth, whisk in the milk or heavy cream. Bring the mixture to a gentle boil over Medium-High heat, whisking frequently.
Step 4: Simmer and Season (Low Intensity)
As soon as bubbles break the surface, reduce the heat to Low. Stir in the salt, black pepper, thyme, crushed rosemary, garlic powder, onion powder, and smoked paprika. Allow the sauce to simmer gently for 3 to 4 minutes until it thickens to the consistency of heavy cream and coats the back of a spoon.
Step 5: Fold in Chicken and Vegetables
Stir in the shredded cooked chicken, frozen peas and carrots, sweet corn, and half of the shredded cheddar cheese (if using). Stir well until evenly distributed and heated through (about 2 minutes). Remove from heat.
(Note: If transferring to a separate baking dish, pour the warm filling into the prepared 9×13-inch dish now).
Step 6: Arrange the Biscuit Topping
Open the can of biscuits and cut each raw biscuit into quarters (giving you 32 pieces). Scatter the biscuit quarters evenly over the top of the hot chicken filling. If desired, sprinkle the remaining shredded cheddar cheese across the tops of the biscuits. Brush the biscuit pieces lightly with 2 tablespoons of melted butter mixed with garlic herbs.
Step 7: Bake to Golden Perfection
Transfer the skillet or baking dish to the preheated oven. Bake uncovered at 375°F (190°C) for 22 to 28 minutes.
Baking Tip: Check at the 18-minute mark. If the tops of the biscuits are browning too fast while the undersides remain doughy, loosely tent a sheet of aluminum foil over the top and continue baking until the biscuits are cooked through and the filling is actively bubbling around the edges.
Step 8: Rest and Serve
Remove the casserole from the oven and let it rest on a wire rack or heat-safe board for 8 to 10 minutes before serving. This allows the sauce to settle and thicken properly for clean scooping. Garnish with fresh chopped parsley and serve warm.
Chef’s Tips for Success
-
Avoid Soggy Biscuit Bottoms: Always ensure your chicken filling is hot and bubbling before arranging the biscuit dough on top. The heat from the filling starts cooking the bottoms immediately upon contact.
-
Rotisserie Hack: Using store-bought rotisserie chicken saves 20 minutes of prep and adds seasoned depth to the gravy.
-
Homemade Biscuit Swap: If you prefer scratch cooking, drop spoonfuls of homemade buttermilk drop-biscuit dough over the hot filling instead of canned dough.
-
Freezing & Make-Ahead: You can prepare the creamy chicken filling up to 48 hours in advance and store it in an airtight container in the refrigerator. Reheat the filling until hot on the stovetop before assembling with fresh biscuits and baking.
Storage & Reheating
-
Refrigeration: Store leftover casserole in an airtight container in the refrigerator for up to 4 days.
-
Reheating in the Oven: Reheat covered with foil at 350°F (175°C) for 15–20 minutes, removing the foil during the last 5 minutes to restore biscuit crispness.
-
Reheating in the Microwave: Heat individual portions on medium power for 1.5 to 2 minutes (biscuits will soften rather than crisp).
