Step-by-Step Canning Instructions
Step 1: Equipment & Jar Preparation

Inspect your canning jars carefully for any hairline nicks, cracks, or sharp edges along the rim. Discard damaged jars.

Wash jars, lids, and screw bands in hot, soapy water, rinsing thoroughly.

Place the wire rack inside your water-bath canner, fill it halfway with water, and submerge the clean jars. Heat the water over Medium-Low Heat until it reaches approximately 180°F (82°C). Keep jars hot until ready to pack to prevent thermal shock and jar breakage when hot syrup is added.
Step 2: Berry Selection & Cleaning

Sort through the fresh blueberries. Remove any stems, leaves, bruised berries, or unripened green fruit.

Transfer the berries into a colander and gently rinse under cold water. Handle delicate berries with care to keep the skins intact. Drain well.
Step 3: Preparing the Light Syrup

In a medium saucepan, combine 4 cups of filtered water, 1 cup of granulated sugar, and 2 tablespoons of fresh lemon juice.

Turn the burner to Medium-High Heat and stir continuously until the sugar completely dissolves and the mixture reaches a rolling boil.

Once boiling, reduce the heat to Low Heat to keep the light syrup warm while you pack the jars.
Step 4: Hot Pack Method (Recommended for Best Quality)
Note: Hot packing helps prevent berries from floating to the top of the jar after processing.

Gently drop the washed blueberries directly into the simmering syrup saucepan.

Keep over Medium-Low Heat for 30 to 60 seconds—just long enough to heat the berries through without turning them to mush.

Turn off the burner.
Step 5: Filling the Jars

Using your jar lifter, carefully remove one hot jar from the hot water bath and drain any standing water back into the pot. Place the jar on a clean towel on your counter.

Insert a wide-mouth canning funnel into the jar. Using a slotted spoon, transfer the heated blueberries into the jar, leaving a generous 1/2-inch space at the top.

Ladle the hot sugar syrup over the blueberries, ensuring the berries are completely submerged while strictly maintaining a 1/2-inch headspace between the liquid line and the top rim of the jar.

Insert your bubble remover tool gently around the interior edges of the jar to release trapped air bubbles. Adjust syrup levels if necessary to maintain the exact 1/2-inch headspace.
Step 6: Sealing the Jars

Wipe the rim of the jar thoroughly with a clean, damp paper towel to clear away any syrup residue or berry seeds that could prevent a vacuum seal.

Center a hot, clean lid over the rim.

Screw the metal band down over the lid until it is fingertip tight (do not overtighten, as trapped air must escape during processing).
Step 7: Water-Bath Processing

Use the jar lifter to gently lower the packed jar back into the water-bath canner. Repeat steps 5 and 6 for the remaining jars.

Ensure the hot water level in the canner covers the tops of the submerged jars by at least 1 to 2 inches. Add extra boiling water if needed.

Place the lid on the canner and turn the burner to High Heat.

Once the water achieves a continuous, vigorous rolling boil, start your timer:

Pint Jars: Process for 15 Minutes

Quart Jars: Process for 20 Minutes (Note: Increase processing time by 5 minutes if you live at an altitude of 1,001 to 3,000 feet, 10 minutes for 3,001 to 6,000 feet, or 15 minutes for over 6,000 feet).

Step 8: Cooling & Verifying Seals

When the processing time ends, turn off the heat, remove the canner lid, and let the jars sit in the hot water undisturbed for 5 minutes.

Use the jar lifter to remove the jars vertically (do not tilt them) and place them on a wooden board or a towel-lined countertop spaced 1 to 2 inches apart.

Let the jars cool undisturbed at room temperature for 12 to 24 hours. You will hear satisfying “ping” sounds as the vacuum seals pull the lids down tight.

After 12 to 24 hours, press the center of each lid. If the lid is firm and does not flex or pop up, the jar is successfully vacuum-sealed. Remove screw bands, wipe jars clean, label with the date, and store in a cool, dark pantry. Unsealed jars should be refrigerated immediately and consumed within 2 weeks.
Shelf Life & Storage
Properly processed and sealed jars of canned blueberries will maintain optimum quality, color, and flavor for 12 to 18 months when stored in a dark, dry cabinet away from direct sunlight and heat sources. Once opened, keep the jar tightly covered in the refrigerator and use within 10 to 14 days.
