Step-by-Step Instructions

Step 1: Prep and Roast the Cauliflower

Step 2: Prepare the Velvet Cheese Sauce

Step 3: Combine and Assemble

  1. Lightly grease a 9×13-inch baking dish with butter or non-stick cooking spray.

  2. Transfer the roasted cauliflower florets into the baking dish, spreading them out evenly.

  3. Pour the hot cheese sauce evenly over the top, using a spatula to ensure every floret is coated.

  4. Sprinkle the remaining ½ cup of sharp cheddar, ½ cup of Gruyère, and the optional crushed pork rind/almond flour mixture evenly across the top.

Step 4: Bake to Golden Perfection

  1. Place the baking dish into the oven preheated to 375°F (190°C).
