Prep Time 25 minutes
Cook Time 15 minutes
Water Bath Canning 10 minutes
Total Time ~50 minutes
Yield 6 half-pint (8 oz) jars
Heat Intensity Medium-High (3.5 / 5)
Flavor Profile Tangy, sugary, bright, with a lingering spicy finish

Ingredients List

  • 2 cups Red Bell Peppers — finely diced (approx. 2 medium peppers)

  • 1 cup Jalapeño Peppers — finely diced, seeds and ribs retained for heat (approx. 5–6 medium jalapeños)

  • ¼ cup Habanero Peppers — finely minced (approx. 2 habaneros, seeded for moderate heat or unseeded for intense heat)

  • 1 ½ cups Apple Cider Vinegar — 5% acidity (essential for safe preservation)

  • 5 cups Granulated White Sugar — do not reduce; sugar is critical for pectin activation and preservation

  • 1 box (1.75 oz / 49g) Powdered Fruit Pectin — regular/classic pectin

  • 1 tsp Unsalted Butter — prevents excess foam formation during boiling

  • ½ tsp Salt — balances the acidity and sweetness

Heat Intensity & Flavor Calibration Guide

You can easily adapt this recipe to suit different spice thresholds while preserving the proper balance needed for setting and preservation:

  • Mild Heat Intensity: Use 2 ½ cups red bell peppers, ½ cup jalapeños (completely deseeded), and 0 habaneros.

  • Medium Heat Intensity: Use 2 cups red bell peppers, 1 cup jalapeños (half deseeded), and 1 habanero (deseeded).

  • Hot Heat Intensity (Standard Recipe): Follow exact recipe quantities above with seeds left in the jalapeños.

  • Extra-Hot Heat Intensity: Replace 1 cup of bell peppers with 1 additional cup of serrano or habanero peppers.

Step-by-Step Cooking Instructions

1.Prep the Peppers:Intensity: Low (Manual Prep) | Time: 15 min.

Wash all peppers thoroughly. Put on food-safe gloves before handling fiery peppers like jalapeños and habaneros. Core, seed, and finely dice the peppers manually or pulse them in a food processor. Aim for uniform, tiny specs so the peppers distribute evenly throughout the finished jelly rather than sinking or floating.

2.Combine Ingredients & Dissolve Pectin:Intensity: Medium-High Heat | Time: 5 min.

In a large, heavy-bottomed stainless steel pot or Dutch oven, combine the diced bell peppers, jalapeños, habaneros, apple cider vinegar, butter, and powdered pectin. Stir well to dissolve the pectin into the liquid. Bring the mixture to a full rolling boil over medium-high heat, stirring constantly with a wooden spoon or silicone spatula.

3.Add Sugar & Hard Boil:Intensity: Maximum High Heat | Time: 5 min.

Once the mixture reaches a boil that cannot be stirred down, dump in all 5 cups of sugar at once. Stir vigorously until the sugar completely dissolves. Bring the pot back to a full rolling boil over high heat. Cook for exactly 1 full minute while maintaining a hard boil and stirring non-stop to prevent scorching.

4.Test the Gel & Skim Foam:Intensity: Off Heat | Time: 3 min.

Remove the pot completely from the heat source. Skim off any leftover foam from the surface using a metal spoon. To test if the jelly is ready to set, drop a small spoonful onto a chilled plate from the freezer. Wait 30 seconds and tilt the plate; if it glides slowly like a thick syrup and wrinkles when pushed, the gel stage is reached.

5.Fill Jars & Process (Water Bath):Intensity: Boiling Water Bath | Time: 10 min.

Ladle the hot jelly into warm, sterilized half-pint jars, leaving ¼-inch headspace at the top. Wipe the jar rims clean with a damp cloth, center the lids, and screw the bands on until fingertip-tight. Process the jars in a boiling water bath canner for 10 minutes (adjust for elevation if above 1,000 feet). Remove jars and cool undisturbed on a towel for 12–24 hours until sealed.

Important Recipe Tips for Success

Safety Caution: Always wear disposable gloves when cutting jalapeños and habaneros. Capsaicin oils linger on skin and can cause severe burns if you touch your face or eyes.

  • Do Not Alter the Sugar Ratio: Reduced-sugar attempts with classic pectin will fail to gel, leaving you with syrup instead of jelly.

  • Floating Pepper Fix: If pepper pieces float to the top of your jars during cooling, gently invert the sealed jars halfway through cooling (~30 minutes after processing) to redistribute the pieces throughout the set jelly.

  • Storage & Shelf Life: Properly water-bath-canned jars remain shelf-stable in a cool, dark pantry for up to 12 months. Once opened, keep refrigerated and consume within 1 month.
