Ingredients

  • 10 organic lemons
  • 750 ml high-proof vodka (40–50% alcohol)
  • 4 cups water
  • 3 cups granulated sugar

  • Extra lemon zest for stronger flavor

  • Large glass jar with airtight lid
  • Fine mesh strainer
  • Cheesecloth
  • Large saucepan
  • Funnel
  • Glass bottles for storage

Instructions

Step 1: Prepare the Lemons

Wash the lemons thoroughly under warm water to remove any dirt or residue. Dry them completely with a clean towel.

Using a vegetable peeler, remove only the yellow outer peel. Avoid the white pith, as it can make the limoncello bitter.


Step 2: Infuse the Alcohol

Place all lemon peels into a large sterilized glass jar.

Pour the vodka over the peels until they are completely submerged.

Seal the jar tightly.

Store in a cool, dark place for 14 to 30 days, gently shaking the jar every few days.

During this time, the alcohol will become a beautiful golden-yellow color while extracting the fragrant lemon oils.


Step 3: Prepare the Sugar Syrup

After the infusion period, combine the water and sugar in a saucepan.

Heat over medium heat until the sugar dissolves completely.

Do not boil vigorously.

Allow the syrup to cool completely to room temperature.


Step 4: Strain the Infusion

Strain the lemon-infused alcohol through a fine mesh sieve lined with cheesecloth.

Discard the lemon peels.

The liquid should be clear and brilliantly yellow.


Step 5: Combine

Slowly stir the cooled sugar syrup into the infused alcohol.

Mix thoroughly.

Taste and adjust sweetness if desired by adding slightly more syrup.


Step 6: Bottle

Using a funnel, pour the limoncello into sterilized glass bottles.

Seal tightly.


Step 7: Age

Although ready to drink immediately, the flavor improves significantly after aging for 2 to 4 weeks.

Store the bottles in the freezer for the smoothest texture and best flavor.

Serve limoncello:
