Recipe Intensity: Easy
Cuisine: International
Course: Condiment / Seasoning
Ingredients
- 6 large fresh lemons
- Water (for washing)
- 1 tablespoon white vinegar (optional, for cleaning the lemons)
Equipment Needed
- Vegetable peeler or sharp knife
- Baking tray
- Parchment paper
- Food dehydrator or oven
- Spice grinder, coffee grinder, or high-speed blender
- Fine mesh sieve (optional)
- Airtight glass jar
Instructions
Step 1: Wash the Lemons
Wash the lemons thoroughly under running water. If desired, soak them in water mixed with white vinegar for about 10 minutes before rinsing well. Pat them completely dry with a clean towel.
Step 2: Peel the Lemons
Using a vegetable peeler, carefully remove only the yellow outer zest. Avoid removing too much of the white pith because it has a bitter taste.
Step 3: Arrange the Peels
Spread the lemon peels in a single layer on a baking tray lined with parchment paper. Make sure the peels do not overlap to allow even drying.
Step 4: Dry the Peels
Choose one of the following methods:
Oven Method
- Preheat the oven to 170°F (75°C) or the lowest setting available.
- Dry the peels for 2–3 hours.
- Turn them every 30 minutes.
- They are ready when completely dry and crisp.
Dehydrator Method
- Set the dehydrator to 125°F (52°C).
- Dry for 6–12 hours until crisp.
Air-Drying Method
- Place peels in a warm, dry area with good airflow.
- Allow them to dry for 2–3 days.
Step 5: Grind
Place the dried peels into a spice grinder or blender. Blend until a fine powder forms.
Step 6: Sift (Optional)
For an extra-smooth powder, sift through a fine mesh sieve. Regrind any larger pieces.
Step 7: Store
Transfer the finished lemon powder into a clean, airtight glass jar. Store in a cool, dry place away from direct sunlight.
Tips for Success
- Always use completely dry peels before grinding.
- Organic lemons produce the best flavor.
- Avoid burning the peels during oven drying.
- Store in airtight containers to preserve freshness.
